I think that this happens because 48 don't support VoLTE.
In my and others' experience posted here, mobile data is usually unusably slow when on a call.
I've no experience with 5G yet so I don't know if that's any better but from what you say I presume not.
I presume that they don't support VoNR/Vo5G on 5G either.
There's no fix/workaround as far as I know - well, other than using WiFi rather than mobile data while on call but that's obviously not always possible.
If you need to contact 48 support about this then see the links in my signature below.

@PaulS9136 Yeah this is happening because of no VoLTE support. It still happens on 5G, as @dalyer said there's no VoNR/Vo5G either but no operator in Ireland supports that anyway AFAIK.
Anytime you are on a call it will drop back to 3G/2G and the internet connection is just not usable. If you are connected to WiFi this shouldn't be an issue as it will use that for internet connection.
The option to turn on VoLTE shows up on iPhone but it's not actually doing anything, same with WiFi Calling.
The only option at the moment if it is really bothering you is to switch to an operator that supports VoLTE e.g. GoMo, Clear Mobile, eir, Three etc.

Yes, my experience using my 4G phone is that mobile data drops back to 2G while on a call and that's basically unusable for modern day web browsing/app connectivity.
