I got a new iphone over the weekend which was working intermittently when I switched over and installed my old 48 sim card but now I have zero connection to 48 network, I can't make or receive calls or connect to data. I've ordered a replacement sim but why did it work for a day and now I've go nothing?

It could be the iPhone activation issue:

If it's not that then you'll have to contact 48 support.

Could you try your SIM in your old phone or another unlocked non iPhone phone just to check that the SIM is working?
