Cancel existing provider? Do I need to?

Hi I have just ordered a sim and I am awaiting it to arrive. When it does arrive I get the idea of porting and keeping my exiting number. One question I have which I can't see here is do I need to inform my current provider? Even though my contract has expired with them

You'll have to ask your existing provider what, if anything, you need to do when moving to another provider.
