My coverage is constantly dropping when I'm not connected to WiFi- emergency calls only message
When I go in and wake the phone up it will come back after a few minutes of trying but am missing calls during the day as I don't realise my coverage is gone

If the phone is taking time to respond to being woken up that sounds like a phone rather than a network issue.
Can you try your SIM in another unlocked phone to see if it works ok there?
You could try a replacement SIM if there's still a problem.
