Hello All,
Looking for some advice from anyone with the knowledge. In the past, anytime I travelled abroad or to Northern Ireland, I had to input APN changes to connect to a local network. Would upgrading from the €7.99 plan to the €12.99 5G plan eliminate the need to change APN's each time? Not a clue about these technical issues.

No, changing membership plan won't change this.
For roaming issues the usual general advice applies...
Unfortunately many people still seem to have problems with roaming abroad on 48 for some reason.
(On the other hand all the people who have no problems don't post to report their positive experiences!)
If your SIM predates January 2023 then a replacement may mitigate or eliminate roaming problems:

If calls and texts work but mobile data doesn't then double check that your APN settings are still configured correctly:
