I got a new SIM, I went into change my SIM, I activated it.. How do I know it's actually activated? And.. How do I keep my own 48 number?

Sounds like you want a replacement SIM not a new SIM?

E,g, because you are moving from a micro SIM to nano SIM or something like that?

In that case if you ordered a new SIM and activated it as a new SIM it will not be linked to your existing account/number etc.

If necessary contact 48 support for advice on what to do next and to see if they can somehow switch your existing account/number/membership etc. to the new SIM that you got and activated.
