I am having this problem and moved my SIM to the wife's Nokia and got 5g no problem. I only get 3g or lte signals from suppliers when I do manual search on the pixel 7. 

I have exactly the same problem as you. LTE or 3g only on pixel 7. Try the SIM in my wife's Nokia and 5g came straight up no problem. Seems like a issue with pixel mobiles??? 樂

I don't have any 5g network on manual search and I have the 5g setting on??
