Can I change from 3 to 48 but keep my old 3 phone number?

if so, what do I need to do please?

Yes - just select the option to port your number over to 48 from 3 when activating your SIM.

or after you have activated your SIM in which case the activated SIM will use a new 089 number until you port your number over:

How do I keep my old number?

If you were on a bill pay contract with 3 then make sure that you don't owe them any money otherwise they may block the number transfer until you settle any outstanding bills.
