The family has four accounts with 48.

My wife and I are availing of €7.99 monthly.

The kids are on €12.99 monthly.

I have a 5G enabled phone, the kids do not.

But their sim cards have 5G, where we're on 4G!

So how would I go about swapping my account plan and SIM with one of the kids?

Is that even possible? Hope you can help, thanks!

Just swap the SIMs?

But if you mean that you want to switch numbers between SIMs so that you all retain your current numbers then there's no easy to do that and you'll have to contact 48 support to ask them if they can facilitate that.
